Chocolate has a very rich and long history originating from the Aztec civilisations to current times where countries and tastes are defined by chocolate. It is little wonder that the cocoa bean was named Theobomba which translates to food of the gods and was used as currency in civilisations gone by.
Chocolate is a product that derives from the fruit of a cocoa tree. Found in rain forests in a very warm and humid climate, the tree thrives under the canopies of larger trees in countries roughly 20 degress north and south of the equator. Africa, South America and parts of Asia are the largest producers with each region having distinctive taste qualities associated with their harvest.
It is from the Cocoa bean that we derive the basic elements of chocolate such as Cocoa Butter, Cocoa liquor and powder. A combination of these products with the addition of sugar and milk make the world of chocolate that we know today.
